SALMON D'ANDRE
4 cooked potatoes
1 cup white sauce
½ cup Swiss cheese
I egg yolk
3 cups boiled salmon
Cracker crumbs
Mash potatoes
and line a greased baking dish with them. To the white sauce add
cheese and egg yolk. Pour ½ of the white sauce over the potatoes
and add salmon. Cover with remainder of the sauce. Sprinkle top
with cracker crumbs. Bake at 350 degrees for 20 minutes. Serves
4.
TOMATO SALAD
4 tomatoes
1 head Romaine lettuce
French dressing, prepared
Slice tomatoes
very thin. Overlap tomato slices on salad plate to form a row. Place
each row on a leaf of the Romaine lettuce and cover with French
dressing. Serves 4.
CARROT RING
WiTH PEAS
2 tablespoons
butter
2 tablespoons flour
½ teaspoons salt
½ cup milk
4 eggs
2 cups mashed cooked carrots
I teaspoon onion juice
1 tablespoon finely minced parsley
4 cups peas, frozen or canned
Salt and pepper
Melt butter
an blend the flour and salt into it a little at a time. Add the
milk stirring constantly, until sauce is smooth and thick. Remove
from stove, cool slightly and add well beaten egg yolks. Add carrots,
onion juice and parsley. Fold in egg whites beaten stiff. Pour into
well greased ring mold. Set in pan of hot water and bake in 350
degree oven for 1 hour. Remove from oven and allow to stand for
5 or 10 minutes before turning out on platter. Fill center of ring
with peas which have been seasoned and heated with salt, pepper
and butter. Serves 8.
COCONUT CORN
BREAD
3 cups milk
1can shredded coconut
3 tablespoon grated coconut
1/2 teaspoon anise seeds
2 cups corn meal
2 tablespoons butter
Eggs, beaten
Salt
2 tablespoons sugar
Prepare coconut
milk by scalding 2 cups milk and adding shredded coconut. Let stand
1 hour and then strain through cheesecloth bag. Use a little more
milk than called for, as some is absorbed by cheesecloth. Heat coconut
milk, but be careful not to boil. Add grated coconut and anise seeds.
Put corn meal into double boiler and pour hot coconut milk slowly
over it, mixing thoroughly. After it thickens, remove from fire,
add butter, eggs, salt, 1 cup milk, and sugar. Stir well. Put in
a buttered glass baking dish and bake in 400 degree oven for 30
minutes or until brown crust forms. Slice and serve hot with butter
and spun honey. Serves 8.
PEACH COBBLER
1 no. 2½ can
peaches
½ cup sugar
1½ cups flour
2 eggs
Salt
½ cup milk
1 teaspoon baking powder
Place the peaches
with juice (reserving ½ cup) in a baking dish. Sift the flour, salt,
and baking powder. Add sugar and eggs and mix thoroughly with the
milk and juice. Mix and pour over the peaches. Bake in a moderate
oven for half an hour. Serve hot or chilled, with plain or whipped
cream. Serves 6.
